EL NINO POPTAIL
INGREDIENTS
juice of 2 limes
3 1/2 oz. tequila
1 cucumber, roughly chopped
1 handful fresh cilantro leaves
3 1/2 oz. light agave syrup
10 oz. club soda
3 jalapeño peppers, sliced lengthways
PREPARATION In a blender or food processor, blitz the lime juice, tequila, cucumber, cilantro and agave until smooth, then pour in a pitcher. Stir in the club soda. Divide the mixture between 6 popsicle molds, place the lid on the tray, and freeze for 30 minutes. Place a jalapeño slice in each mold, slide the popsicle sticks into the lid slots and freeze for a further 12-14 hours until solid.
